May I use X-NUCLEO-53L1A1 with 53L0-SATEL-I1 and

vice versa X-NUCLEO-53L0A1 with VL53L1X-SATEL

Yes, you can. I do it all the time. I do it because L0 version has the 4 digit display and the L1 does not. Just plug it in.

But the GUI gets confused, that doesn't work.

You will have to download the examples from the ST web site and use that.
