I am looking for an example .hex file for the M24M02-DR 2Mbit EEPROM (256k x8 format memory). Could you please point me to it?

I don't really understand the point of the question. Intel and Motorola HEX formats have been documented for 4 decades.

The address basis is zero, and describe 256KB, or 4x sections of 64KB

Perhaps generate yourself an example with SRECORD or save a 256Kb image with STM32 Cube Programmer or an EEPROM programmer
