STM32F103C8T6 + MAX30003

I'm using STM32F103C8T6 controller and I want to connect MAX30003 breakout board. Which preferences it's better to use for the best performance (STMCubeMX)? 

Can I communicate it with an SPI slave using the UART1 synchronous mode (configured with CubeMX, using the LL library)??
