The maximum value that the sensor can reach and also the accuracy depend on the full scale you set according to datasheet:

If you want to reach higher g you can look at LSM6DSV32X that has a maximum full scale of 32g, but not that it is not for ASIL B automotive applications.

Can they both output angles? Yes.
