The Product Longevity of the MCUS you mentioned is available on Product longevity - STMicroelectronics. For the release date, the easiest way is probably to check the respective datasheet. The revision history can be found at its end, in which the date of revision 1 corresponds quite well with the release date

The title asks about boards.

The boards are intended for development & evaluation - not deployment as products - so I don't think they're covered by any longevity programmes ?

I think this is a typo on the question of @aditya4 since there is not an evaluation board based on the stm32u595vj and the STM32H743IIT. But for Boards, you are totally right @Andrew Neil .
