I ordered / received the P-NUCLEO-53L8A1 development kit to evaluate the VL53L8CX ToF sensor.

It includes:

X-NUCLEO-53L8A1 Time-of-Flight expansion board based on the VL53L8
series for STM32 Nucleo
• NUCLEO-F401RE development board

Could someone possibly point me to a quick-start guide?

It's easy - sort of...

Download the evaluation code that runs the Eval kit, and install it on your PC. Once the code is installed on your PC, simply run it. There will be an 'about' tab that contains the user manual. And it's that user manual that will get you going.
