which firmware to use for STEVAL-STWBXCS1?  datalog2 or ai monitor?

Both are valid for STEVAL-STWINBX1.

It depends on the use case you're addressing:

• FP-SNS-DATALOG2 is a high-rate (up to 6 Mbit/s) data capture software suite, compatible with STDATALOG-PYSDK and STBLESensor app for system setup and real-time control.
• FP-AI-MONITOR2 is a proof of concept for a AI-based predictive maintenance solution with anomaly detection and classification.

There is also a further function pack called FP-SNS-STBOX1 supporting STWIN.box. It is a collection of sample firmware examples to perform sensor and audio data reading, motion algorithm feature demo, and BLE connectivity.

The default firmware for STEVAL-STWINBX1, natively flashed onto the board, is the BLEDefaultFw example distributed in source code into FP-SNS-STBOX1.
