Use NUCLEO-N657X0-Q as custom ASIC over Octal SPI?

Can i use the NUCLEO-N657X0-Q board as custom ASIC over an Octal SPI style bus?

Your question is unclear: what do you mean by "use the board as a custom ASIC"?

The STM32 is a microcontroller.

So if I assume I understood your question: that "Nucleo board" will play as a kind of slave of another OSPI master, the answer: that's not possible. OSPI embedded in all STM32 MCUs is always a master and cannot be configured as a slave.
