I have successfully run the following code on the Nucleo-WL55JC development board, which is based on your code.
Are you sure that the MCU is not waking up from STOP2 mode and that the code isn't getting stuck somewhere in the LCD functions?
Are you measuring power consumption?
Does your board have an available LED?
I suggest simplifying the code by commenting out all unnecessary parts (such as LCD and I2C parts) and at first ensure that you can wake up from STOP2 mode upon a button press. After waking up, turn on an LED, add a delay, switch off the LED, and then return to STOP2 mode.
Once you've confirmed this is working, you can proceed with the LCD.
Considering your clock settings, you may also want to set the STOPWUCK bit in the RCC_CFGR register to use the HSI16 oscillator as the wake-up clock from STOP2 mode (otherwise, it defaults to the MSI oscillator).
