On the attached image, I can see you've selected ADC1Samples[0] and pwm_start variable to be monitored. Not sure to understand your issue, but if you want to edit this list, you need to click on the "pen" button. Once you've selected/unselected the variable you want to monitor, click on "Update" button, then "Done". Check that the list is also be updated in the processing node.
Don't forget to press deploy in order to validate your modification.
